I love Sunday dinner and movie.
With so much happening here,
I have neglected a few things that mean so much to me.
Today, Larry insisted.
He insisted that I smile, go walk the square in McKinney,
and plan Sunday dinner.
{he offered to help if I needed him to. But NO.
I had this one handled}
Last week, I read a blog, about an old recipe.
1977-ish antique from Trader Joe's.
Chicken Enchilada Casserole.
I adore enchilada casseroles, especially Lauren Miller's recipe.
BUT the Trader Joe recipe intrigued me.
So with a frown on my face, I followed Dr Tolbert's advice.
Please find below the menu for the most charming of afternoons.
Trader Joe's 1977 Chicken Enchilada Casserole
Spinach salad
Iced Tea
Ingredients
4 chicken breasts (boiled and shredded)
(I used a rotisserie chicken from Sprouts)
1 pound grated cheese (three cheese blend)
8 ounces of sour cream
2 cans enchilada sauce
1 package corn tortillas (cut in half)

Mix, shredded chicken, 8 oz sour cream and one can of enchilada sauce.
Put a few spoonfuls of the enchilada sauce
on the bottom of a 13 X 9" baking dish.
Line the bottom of dish with corn tortillas.
I forgot to cut tortillas in half but they were fine |
Layer half of the chicken mixture on top of the corn tortillas.
Next, 1/3 of the cheese
Next, tortillas
Then, last of the chicken
1/3 of the cheese
more tortillas
Top with remaining cheese and more enchilada sauce
Bake at 350 degrees for 20 to 30 minutes.
Let cool for a few moments, garnish with favorites.
Larry chose my favorite "comfort" movie.
He knows me so well.
I needed to cook and I needed to watch David Niven & Doris Day.
