Another Day, Another Muu Muu and Another New Recipe

 Yesterday, while the laundry was getting done, I made a new Muu Muu. (I cut out the pattern pieces last week)
I honesty did not know where the energy came from, but I finished the laundry, made the muu muu, walked 2.5 miles and finished the back to a sweater that I am knitting.
Oh, one more thing.
Larry and I tested a new recipe. It was a Chicken Zucchini Casserole.
It was so good that we are having the leftovers tonight.

Chicken Zucchini Casserole
1 package (6 Ounces) stuffing mix
3/4 cup butter, melted
3 cups diced zucchini
2 cups cubed, cooked chicken breast 
1 (10 3/4 ounce) condensed cream of chicken soup
1 medium carrot, shredded
1/2 cup chopped onion
1/2 cup sour cream

Directions
In a large bowl. combine stuffing mix and melted butter. Set aside 1/2 cup for topping. Add the zucchini, chicken, soup, carrot, onion and sour cream to the remining stuffing mixture.
Transfer to a greased 11X7" baking dish.
Sprinkle with reserved stuffing mixture.
Bake, uncovered at 350 degrees till golden and bubbly, 40-45 Minutes.

It is a beautiful, cold March Day in Texas. Larry has a very busy day today at work and I am trying to tie up loose ends and starting a new project today.
Thank goodness that we are having leftovers for dinner tonight.
