The Happy Stretch

Happy April 2nd.
Happy Birthday, Lauren.
My daughter is celebrating a birthday
and
anniversary today.

The past days were wonderful.
They were filled with fun events, old friends, good food
and
a lot of love.
Do you know the happy stretch?
You do a full body stretch, and say to yourself,
I am so happy.
It was that kind of weekend.

I made the little tarts below for Lauren's party.
Easy, fun and delicious.
{but I am biased because I love lemon}
Lemon Tarts
yield 15 tarts
1 package frozen miniature phyllo tart shells, thawed.
3 eggs
1 cup sugar
1/2 cup lemon juice
1 Tablespoon grated lemon peel
1/4 cup butter, cubed
*In a small heavy saucepan over medium heat,
whisk the eggs, sugar, lemon juice and peel until blended. Add butter:cook, whisking constantly until mixture is thickened and coats the back of a spoon.
Transfer to a small bowl, cool for 10 minutes.
Cover and refrigerate until chilled.
*Just before serving, spoon lemon curd into tart shells.
Garnish with raspberries and mint and or whipped cream.
I cannot wait to make these again,
and plan to eat them all myself.
