Test Kitchen Open 9/2010

Yesterday while in the kitchen,
I decided to get serious because Larry was getting hungry,
I played with all "old" ingredients,
while creating a new
Chicken meal for us....
Taste tested and approved by Jami & Larry.
Now for you.....


CHICKEN BREAST PARMESAN


Chicken Breast Parmesan

                                                 6 chicken breasts- washed and pounded to ¼”

                                                                  2 cups Mayonnaise

                                                                ½ cup fine Parmesan

                                                            1 Tablespoon chopped garlic

                                                        2 Tablespoons chopped, fresh chives

                                                               *Preheat oven to 350 degrees.

                                                Mix mayo, Parmesan cheese, garlic and chives

                                                      Place chicken in pam sprayed baking dish.
                                  Place large spoonful of mayo mixture on each breast, spread to edge.
                                                           Sprinkle with extra Parmesan cheese.
                                                             Bake 45 minutes till golden brown. 
                                                                  Serve with roll and salad.
