The Test Kitchen is Open AND Summer Plans

TEX-MEX CORN CHOWDER
Ingredients
1 can (14 oz) cream style golden sweet corn
1 can (8 oz) whole kernel corn, drained
1 can (14 oz) diced tomatoes with garlic and onion
1 can(15 oz) black beans,drained and rinsed
1/2 cup chicken broth
Garnish: Diced jalapeno, cheddar cheese, crushed tortilla chips

Combine Cream style corn, whole kernel corn, undrained diced tomatoes, beans and broth into saucepan. Bring to boil, reduce heat. Simmer, covered for 5-15 minutes.
Ladle into bowls. Sprinkle with garnishes.
Serves 4
This was a "hit"
{served with steak sandwiches}
Larry has been eating the left overs, cold, from the fridge
 and 
he says that the soup is great cold too.
He suggested that we remember the cold soup,
 when it is 100 degrees outside.

After being out of town last week,

 I feel a bit lost this week.
Larry and I have been traveling each month since the New Year.
Now, I will be home all summer.
I am planning a dinner party.

the one year anniversary, diagnosis of breast cancer.

You know what dear, Dr Phil says,
"you cannot change what you do not acknowledge."
Well...I think this summer {cancer diagnosis anniversary} 
is scaring the merde out of me.
My faith is ever-present,
 there is a circle of family and friends who surround me.
 I shall try to look past the fast heartbeat,
and 
keep busy. Soooooooo
Who wants to come to a dinner party????
