...but hate the calories, so I found a recipe that is perfect!
{this recipe has about 100 less calories per slice than the regular version}
BLUEBERRY POUND CAKE
2 cups sugar
1/3 cup margarine, softened
1/2 cup (4 ounces) 1/3 less fat cream cheese, softened
3 large eggs
1 large egg white
2 teaspoons vanilla extract
3 cups flour, divided
2 cups fresh blueberries
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8oz) carton lemon, low fat yogurt
Cooking spray
"Glaze"
1/2 cup powder sugar
4 teaspoons lemon juice

1. Preheat oven to 350
1. Preheat oven to 350
2. Beat sugar, butter and cream cheese till blended, about 5 min. Add eggs one at a time beating after each addition. Beat in Vanilla.
3. Combine 2 tablespoons of flour with blueberries in small bowl, toss to coat, set aside.
4. Combine flour, baking powder, baking soda and salt.
5. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture.
6. Fold in Blueberry mixture.
7. Pour into Pam sprayed tube pan. Tap on counter to remove air bubbles.
8. Bake for 1 hour 15 min at 350.
9. Cool cake for 10 min, remove from pan onto plate.
10. Combine powdered sugar and lemon juice. Drizzle over warm cake.
Yield 16 servings @ 288 calories per slice
