It was a wonderful weekend.
Today I find myself with amazing memories,
and a sadness because the long awaited weekend
is now over........
Yesterday I served brunch to the "Bunch"
Please enjoy the "hit" recipe of the morning.
CASSEROLE: French Toast with Praline Topping
1 loaf French bread
8 large eggs
2 cups half and half
1 cup milk
2 Tablespoons sugar
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Dash salt
Praline Topping (recipe below)
Maple Syrup
*Slice French bread into 20 slices, about 1” each. Grease 13 X 9” baking dish (I use PAM). Arrange slices in baking dish, overlapping to fit. In a large bowl, mix eggs, half and half, milk, sugar, vanilla, cinnamon, nutmeg and salt. With mixer, combine well but not foamy.
Pour mixture over bread slices, making sure all slices are completely covered. (I use a spoon to get the in between places). Cover with foil and refrigerate overnight.
Next morning: Preheat oven to 350 degrees.
Spread praline topping evenly over the top and bake for 45 minutes, till golden and puffed. Serve with maple syrup. (You only need a drizzle of the syrup)
*PRALINE TOPPING
2 sticks butter. Room temperature
1 cup packed brown sugar
1 cup chopped pecans
*remember, when you get the casserole out in the morning it will be cold. Remove it from the fridge 2 hours before cooking & serving, the first hour to get to room temperature, the second hour cooking and a 10 min set before you enjoy.
2 tablespoons light corn syrup
½ teaspoon cinnamon
½ teaspoon cinnamon
½ teaspoon nutmeg
