I have been busy this week
but wanted to  take a few moments
to post a recipe I have been working on.

JALAPENO CHEESE MUFFINS


2 cups all purpose flour
1 Tablespoon baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 1/4 cups milk
1/4 cup vegetable oil
1 egg
1 cup shredded cheddar cheese, divided
2 Tablespoons Jalapeno peppers(seeds and all) chopped

Perheat oven to 400 degrees
line muffin cups with paper muffin cups,
give paper cups a quick spray with PAM
In bowl:
Combine flour, baking powder, sugar, and salt
In another bowl:
Combine milk, oil, and egg
Stir milk mixture into dry mixture till JUST moist
Fold in  3/4 cup cheese and jalapenos into mixture
Do not over mix
Spoon into cups, top with more cheese
Bake for 15 to 20 minutes or till brown
Cool in pan 5 min, remove from pan, serve warm

These turned out really great!
Add a salad and a hard cooked egg,
and you have a great dinner.
