Redemption/ The Lemon Custard Pie

REDEMPTION PIE

After messing up yesterday's cranberry tea,
I redeemed myself by baking a new pie.
I should have stayed in bed, because today my back is hurting..
but here it is...

LEMON CUSTARD PIE
1 cup sugar
1 Tablespoon butter, softened
2 eggs separated
1 cup milk
3 Tablespoons all purpose flour
1/8 teaspoon salt
1/4 cup lemon juice
2 teaspoons grated lemon peel
1 9" unbaked pie pastry
whipped cream

In large bowl beat butter and sugar.
Add egg yolks one at a time. Beating well after each addition.
Add milk, flour, salt. Mix well.
Stir in lemon juice and peel.
Set aside.
In small bowl, beat egg whites till stiff peaks form,
fold into lemon mixture.

Pour into unbaked pie shell.
Bake at 325 degrees,
for 50 min to 1 hour.
Cool completely.
Store in refrigerator.

I know...it is a lemon custard pie,
but I shall call it the Redemption Pie.
