Bacon, Lettuce and Fried Egg Sandwiches

  Have you ever been to a Texas diner? They are different than diners anywhere else in the world. Old Texas diners have thick walls. Keeping out the cold winter air and hot summer heat with rustic charm. Tile floors, and old tables. Clean silverware has worn with use and you use only paper napkins. The restrooms are old, but sparkling. Battered menus shout chicken fried steak, chili and fried egg sandwiches. Texas diners do not have hot dogs, scraple, or Philly cheese steak sandwiches. I escaped from a busy day and went to a diner far away. Avoiding errands and drama.
  I almost wished that I owned a pick up truck.

 Running away from chores, to eat at a Texas Diner, is called "Texas Meditation."

I like this. These diners achieve an "at home" comfortable feeling without even being aware of it. Fond memories of the Southern Kitchen on Maple Ave a long, long time ago.
