SUNDAY DINNER
If you know me, you know that each Sunday I cook, bake and present.
Last week at the Half Price Book Store I found a little cookbook for $2.00.
This Sundays salad recipe was in the little cookbook.
I paired it with a panini sandwich.

FIESTA TACO SALAD
1 can black beans:drained and rinsed
1/2 cup taco sauce
6 cups of lettuce. Bite size pieces
one bell pepper, cut into strips
2 medium tomatoes cut into wedges
1/2 cup ripe olives, sliced
1 cup of corn chips
1 cup shredded cheddar cheese
1/2 cup thousand island dressing
stir constantly till heated through5-6 minutes.
2. In large bowl toss lettuce, bell pepper, tomatoes, olives, corn chips.
3. Spoon bean mixture over lettuce mixture:toss.
4. Sprinkle with cheese.
5. Serve immediately with dressing
Serve with your favorite sandwich!

I loved how the beans looked after I rinsed them off.
The salad mixed well, and tasted great.
I made paninis.
Roast beef with cheeses and mushrooms.
It was a wonderful Sunday!
