Today I am grateful for patience.

This week has begun to feel like autumn!
The leaves in Texas are turning colors, it is still nighttime 
outside at 7:15 in the morning, I have a brand-new flannel robe for the cool evenings and bake bread once a week.

The bread I bake is a rustic white loaf, and bake it in a cloche. 
I have been baking the same bread each week, till  the recipe and process is perfect. 
I'm learning to score the dough with a lame, that is basically a razor on a stick. Scoring the bread dough allows it to release steam and expand while cooking.
Confession: while baking my first loaf of bread, I accidently cut myself with the lame before I ever could make one score in the dough. The cut HURT for days. I learned so much from baking that first loaf.

I have been studying bread this past summer and have learned one important thing. 
Patience.
You have to be patient while learning about bread and baking it.
The interesting thing is....patience in baking bread can be applied to all facets of our life.
As I get older, patience is important. Patience can help me handle stress and reminds me how precious time is.
