Busy Day Recipe

Today I am getting my house back to "normal" whatever that is.
Do you mind if I share a recipe I fell in love with
over the holidays?
I served this salad on Christmas Eve,
when all of the family was here.
Enjoy.



The recipe came from the best vintage cookbook,
dated 1958, found in Benbrook, Texas.
No, I did not pay 39 cents for it.

GREEN BEAN PARMESAN SALAD


 2 Lb. green beans broken into 2" peaces
1 small onion minced
1/2 cup salad oil
1/4 wine vinegar
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Parmesan cheese
***
Steam beans till ALMOST tender, 8-10 min.
Drain; cool.
Toss with remaining ingredients.
Refrigerate.
8-10 servings
