A Sprinkle Of Cheese



                                      Today was cloudy
and rain threatened all day long.
I planned dinner, something easy and hot.
Larry has an awful cold.
This dinner helped.


QUICK ONION SOUP

 1/8 pound butter
3 large onions, slices VERY thin
3 cans consomme
1/2 cup red wine
1 cup grated Swiss  or Parmesan cheese
1 cup croutons
(if you have the time, make your own croutons)

Melt butter and saute onions until clear.
Add consomme and wine.
Pour into oven casserole, sprinkle with cheese.
Bake in preheated 350 degree oven for 30 minutes.
To brown the cheese, broil for a minute after cooking.
Pass the croutons.
Serves 4
This is my favorite onion soup.
