Recipe: Donna Reed Cheese Puffs

A friend requested my recipe for
Donna Reed Cheese Puffs.
Rita, this is for you.

1 cup milk
1 stick butter
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 cup flour 
4 large eggs
1/2 cup Gruyere cheese grated
(I use the fondue blend at Whole Foods Market)
1/4 cup Parmesan cheese grated
1 egg beaten with small amount of water

Heat oven to 425 degrees.
In a saucepan add milk, butter, salt and pepper.
Heat till scalding.
Add flour all at once and beat with a wooden spoon
till mixture comes together.
Cook over low heat for 2 min.
Place entire mixture into food processor.
Add eggs, and cheeses.
blend till mixture is blended,
smooth and thick.
Line cookie sheets with parchment paper.
Spoon dough into a large zip loc bag.
Cut a small corner from the bag.
Pipe the dough onto the parchment,
in about 1 1/2" rounds.
Brush the top of the puffs with egg mixture.
Bake 15 -20 min till golden brown.
TIP: bake only one pan at a time,
as they will heat evenly and puff
the little cheeses to perfection.
about 30 puffs.
