An Addition to My Holiday Cookbook

Yesterday, after a long weekend in Temple Texas, for the PFG Awards dinner, we had Sunday, dinner and movie planned. I have been adding recipes to the "Holiday Cookbook"( I take my own recipes to prepare while on holiday, far away) and wanted to try this mushroom soup to see if it was worthy to be part of the "Soups" in my holiday cookbook......It passed with flying colors!
3/4 lb fresh mushrooms sliced thin (I like baby bellas)
3 Tablespoon butter
3 Cups of chicken broth
Salt & pepper to taste
2 cups light cream ( half and half)
1 onion chopped fine
3 1/2 Tablespoon flour
1 Tablespoon Soy Sauce

(for the vegetarians in your life,
you can substitute vegetable broth for chicken broth)
Place mushrooms, onion, salt and pepper in butter, in a large saucepan.
Saute 5 minutes.
Stir in flour.
Add chicken broth and soy sauce.
Simmer 10 minutes.
Add cream and reheat to piping hot.
Serve.
I paired the soup with a sandwich from Subway,
beer and the movie,
Legend of the Fall.
Perfection.
