I Always Cook On Sunday

Yesterday I made what we call
THE Quiche.
*****
Ingredients
3 cups, shredded frozen hash brown potatoes(thawed)
4 Tablespoons butter (3/4 stick), melted
4 large eggs beaten
1 cup half and half
1 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded cheddar
Salt and freshly ground black pepper
Directions
Preheat oven to 450 degrees F
1.Gently press the drained hash browns
between paper towels to dry them. 2. In a 9 inch pie plate, toss the hash browns and melted butter.
3.Press them into the bottom and up the sides
to form a crust.
4. Bake for 25 minutes until golden brown
and starting to crisp.
5. Meanwhile, in a large mixing bowl,
Combine the remaining ingredients.
6. When the hash brown crust is ready,
Pour the egg mixture over it
and return to oven.
7.Lower oven temperature to 350 degrees F
and bake for about 40 minutes
or
Until the quiche is golden brown and puffed.
8. Let sit for about 5-10 minutes...as it will "set"
9. Serve warm...enjoy.
Larry and I LOVE this quiche.
I serve it with a salad
and
Champagne.
