Today is Sunday dinner and a movie.
I baked a cake using a new recipe.
Thank goodness that I took a photo of the cake
Because,
Larry has already cut himself a slice.
Please find the recipe below.
Happy Sunday.
Love you,
Me.
~~~~~~~
ORANGE DREAMSICLE CAKE
1 package plain yellow cake mix.
3/4 cup Miracle Whip salad dressing
1 package (1.3oz) whipped topping mix
3/4 cup fresh orange juice ( from 2 medium oranges)
3 large eggs
2 Tablespoons freshly grated orange zest
~Glaze~
1 1/2 cups confectioners sugar
2-3 Tablespoons fresh orange juice
Place rack in center of the oven.
Grease and flour a 10-inch tube pan.
Set pan aside.
***
Place cake mix, salad dressing, whipped topping mix,
Orange juice, eggs and orange zest into a large
mixing bowl.
Blend with an electric mixer on low for one minute.
Stop the machine and scrape the sides of the bowl.
Increase speed to medium and
mix for two more minutes.
The batter will look well blended and thick.
Pour batter into prepared pan.
Smooth batter
Place in oven.
Bake cake until it springs back when lightly pressed with your finger,
and just starts to pull away from the sides of the pan.
40-45 minutes.
Remove the pan from the oven and place on a wire rack to cool
for 15 minutes.
Run a knife around the the edge of the cake.
Invert onto a plate.
Let cool completely.
*****
Prepare glaze.
Place confectioners sugar and orange juice in bowl.
Mix with spoon till smooth.
( I added more juice and extra zest)
Spoon glaze over top of cake,
letting it drizzle down the sides.
Let rest for 20 minutes for the glaze to set.
Slice and serve,
This cake will last covered,
one week at room temperature....
Sweet dreams.
me.
