Spiced Pecans

SPICED PECANS
3/4 cup sugar
2 cups warm water
2 cups pecan halves
1 teaspoon cinnamon
1/2 teaspoon ground red pepper
Pam spray for the baking sheet

Preheat oven to 350 degrees
Lightly mist a rimmed baking sheet with Pam
Place warm water and 1/2 sup sugar in saucepan
Warm to medium stirring till the sugar dissolves
Turn off the heat, stir in pecan halves
Stir well to coat with syrup
Let pecans soak for 10 minutes
Drain.

Place remaining 1/4 cup sugar with Cinnamon and Pepper
In large plastic resealable bag
Shake to combine
Add drained pecans and shake to coat well
Transfer pecans to prepared baking sheet
Spread out onto a single layer
Bake till golden
About 12 minutes
Let pecans cook before using or storing.

Wednesdays are always so nondescript, unless you have a million things to do. Then it seems like that extra day in the middle of the week. Thanksgiving dinner is Saturday! Getting everything ready is one of my favorite things.
I have a batch of these pecans in the oven.....must go and check on them......
