Perfect Pancakes

Thank you, Thank you! A friend sent this recipe to me.... we have a tiny joke about adding a few extra ingredients to pancakes, for that WONDERFUL, special and sometimes obnoxious, family member who comes to brunch......that ingredient is not in this recipe, Enjoy! ( these are fabulous pancakes, add banana and macadamia nuts, close your eyes and pretend that you are on Kaua'i) Abby's SPECIAL PANCAKES Ingredients 1 cup all-purpose flour 1 tablespoon white sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup milk 1 egg 2 tablespoons vegetable oil 1 tablespoon vanilla extract Powdered sugar (optional) Fresh fruit (optional) Maple syrup (optional) Prepare the pan or griddle over medium heat. Keeping it at high heat will burn the pancakes and low heat will just under cook it. Combine the dry ingredients into a bowl and the wet ingredients in another. The powdered sugar, fruit, and maple syrup are for the toppings after, so don't mix it into the batter! Beat the wet ingredients with an egg beater and then slowly add the dry mixture in. Stir well. Use a fork and then work your way into the batter to get the lumps out. Rotate the bowl so you get an even mixture. Once smooth, pour about 1/4 cup of the batter onto the pan or griddle. Depending on how big you want the pancakes, you can adjust the amount that goes onto the hot surface. It should take about a minute per side, but if not, leave it until it is golden brown and then flip it. The first pancake usually looks funky so don't stress if it comes out wrong. The other pancakes should come out fine. Using a thin spatula, take the finished pancakes off the pan/griddle. Serve with powdered sugar, fresh fruit, maple syrup, or any combination of the 3.Note: This batter could also be used to make waffles if you have a waffle maker! Love you lots, Me me me.......
