Salades & Sunflowers

I have not had a chance to take a photo yet, but, the hundreds of sunflowers in the garden have stared to bloom! They are happy and charming. I love looking out and seeing yellow joy.

The 4th of July makes people happy. Face book posting of my friends having family time, concert time, road trip time, and to top it off, fireworks time. A positive, happy holiday. Perfection.

A few weeks ago I found the salad recipe below. I do not know where I found it, but I made it for Larry this past weekend. It was the BEST salad I have ever had. The directions and ingredients were followed to the letter, and if you make it, I recommend you do to.


CHICKEN SALAD
INGREDIENTS:
  6 cups bite-size pieces salad greens
1 small red onion, thinly sliced, separated into rings
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
2 small zucchini, thinly sliced (about 3 cups)
2 cups shredded Cheddar cheese (8 oz)
½ lb salami, thinly sliced, cut into fourths
2 cups cherry tomatoes, cut in half
1 cup (reduced-calorie if you wish) mayonnaise
1 tablespoon yellow mustard
½ teaspoon prepared horseradish
DIRECTIONS:
  • In very large (5-quart) glass bowl, place  the lettuce. Layer with onion, chicken, zucchini, cheese, salami.
  • In small bowl, mix mayonnaise, mustard and horseradish,add to top of salad, spreading to edge of bowl.
  • Cover and refrigerate at least 8 hours but no longer than 24 hours. Garnish with cherry tomatoes.

I served the salad, for Sunday dinner and Movie.
Paired it with a white wine  and left over pizza.
