A good friend serves pop overs at his restaurants.
Instead of bread, when you arrive at the table,
you receive pop overs and butter.
Last week I was given the recipe,
and
this week I tested it.
Perfection.
Now I share it with you.
POP OVERS
*this recipe is for 6 and is easily doubled
1 1/3 cup milk (whole, warm)
2 cups flour (Gold Metal)
3/4 teaspoon salt
1/2 teaspoon baking powder (Clapper Girl)
3 eggs( large, room temp)

*1 heat milk to warm,do not boil
*2 combine dry ingredients, mix well, set aside
*3in separate bowl beat eggs
*gradually add milk to eggs, mix with mixer till foamy.Gradually add
dry ingredients and continue mixing till smooth.
*Strain through china cap.
*LET BATTER REST AT LEAST ONE HOUR
*preheat oven to 450
*Place popover pans on baking sheet and make sure the cups
are sprayed well with PAM.
*Fill almost to the top with batter.
*Place in hot oven.
* cook at 450 for 15 min THEN turn trmp down to 375 and cook for
30 min longer.
DO NOT OPEN OVEN
(to reheat:place in 300 oven for 4 to 5 min)
