At the beach last year, I was given a recipe.
It is a Hawaiian tradition.
~POIPU BANANA PUDDING~
Ingredients

CRUST
2 cups flour
1 cup butter or margarine
1 cup macadamia nuts, chopped

MIDDLE LAYER
1 package cream cheese (8oz)
1 cup powdered sugar
1/2 container Cool Whip (half of 12-oz)
4-5 bananas

TOP LAYER
2 packages instant vanilla pudding (3 oz)
3 cups cold milk
remaining Cool Whip
1. Blend flour and butter in mixer. Mix in 3/4 cup of the nuts,
reserving 1/4 cup for sprinkle.
Press into 9X13" pan
Bake at 350 degrees for 25 min till golden.
Let cool.
2.Beat cream cheese and powdered sugar until blended and smooth.
Mix in cool whip.
Spread over cooled crust.
Slice bananas evenly over cream cheese mixture.
3. Whip pudding with milk and spread over bananas.
Be sure to seal all edges.
Spread remaining Cool Whip on top.
Sprinkle with reserved macadamia nuts.
Refrigerate several hours to set.
Larry is a huge banana pudding fan, but this single recipe
has become his favorite.
I cannot decide if it is because it is good
or
if because the recipe is from a friend on Kaua'i.
He says that the bottom crust tasts like a cookie....
either way,
it is perfection.
