For Christmas, Lauren gave me a cupcake corer.
As my first experiment I wanted to make
Chocolate cupcakes with filling.
I filled the muffin tin with paper cups.
Using a chocolate cake mix, I made 12 cupcakes.
Once they were cooked
and cooled,
I used my brand new
"Cupcake Plunger"

Recipe for the filling:
6 Tablespoon butter. softened
1 1/2 cups confectioners sugar
3/4 cup Marshmallow Cream
1 1/2 Tablespoons plus 1 teaspoon heavy cream
Mixing these ingredients together well,
and using a pastry bag
or zip loc bag, fill each cupcake.

Here is the recipe for frosting I used:
1/4 cup heavy cream
4 ounces bittersweet chocolate finely chopped
1 Tablespoon butter, softened.
Heat the cream in a saucepan till steaming.
Add the chocolate and let stand for 5 minutes.
Add the butter and stir till smooth.
Spread the top of each cupcake with frosting.
Decorate the top with remaining marshmallow filling.
Place in fridge for 10 min till set.

Lauren & Josh received this first patch of cupcakes.
I have plans for more, using raspberry filling,
lemon curd, custard....
