I love cobbler.
Cobbler that has a strong fruit flavor,
and a topping that is sweet.
Yesterday, I think that I finally found
a version that fits my criteria.
( and super easy for Kiddo's to make with your help)
NOT YOUR GRANDMA'S COBBLER
Ingredients
1/2 cup raisins
1/4 cup walnuts
2 cans apple pie filling
1/4 teaspoon cinnamon
1 Tablespoon brown sugar
1 roll of Pillsbury Cinnamon Rolls
4 hours before cooking:
Place 1/2 cup raisins in small bowl.
cover with water, place Saran wrap over bowl,
let raisins plump for 4 hours.
Drain raisins.
Place in medium saucepan:
2 cans (21oz) apple pie filling
1/4 teaspoon cinnamon
1 Tablespoon brown sugar
1/4 cup walnuts
1/2 cup of drained raisins
Mix gently.
Warm gently.
Preheat oven 375 degrees
Prepare an 8 X 8" baking dish by spraying with PAM.
Spoon warmed apple mixture evenly into pan.
Open cinnamon roll package. Set icing tub in fridge.
Place rolls cinnamon side up, on top of apple mixture.
Bake 20-25 minutes.
Cool completely.
Ice with icing set aside.
Pre-set portions make this cobbler perfect.
But.....
it might need a scoop of vanilla ice cream.
