Friday, Again?

It is Happy Friday. Texas is in the middle of a bitter cold spell. The 14 degree weather seems to have put a cloud over my happy go lucky Friday plans. Give me a bit of time and I will make new plans for the day, taking advantage of an "inside" day.
Yesterday morning was spent at the Dr's office. A complete annual exam. Giving a gallon of blood for a dozen tests, and making appointments for mammogram & bone density X rays.
After THE Dr's visit, I came home and baked. This is a simple cake, but perfect in many ways. Moist, tasty, easy and popular! In my recipe box, this recipe is filed under, Tolbert Comfort Food.
BROWN SUGAR CAKE
1 pkg (2-layer size) yellow cake mix
1 pkg (3 oz) Jello vanilla instant pudding
4 eggs
2/3 cup sour cream
2/3 cup water
1/2 cup oil
1 cup packed brown sugar
1 cup chopped pecans
2 tsp powdered sugar
***
Heat oven to 350 degrees
Mix first 6 ingredients with mixer till blended
Add brown sugar and nuts:mix well.
Pour into a 12 cup fluted pan, greased and floured
Bake one hour, or till toothpick comes out clean.
Cool cake in pan for 10 min.
Loosen cake and invert onto plate.
Cool completely
Sprinkle with powdered sugar.
Enjoy the comfort

Comfort comes in many ways. Food, friendship, books, art, being kind to someone who might need it.........enjoy this comfort cake. Love you, me.
