THE BIRTHDAY RUM CAKE

Today is Larry's birthday.
He asked for a rum cake, again.
Smile, smile.

BACARDI RUM CAKE
1 cup chopped pecans
1 pkg yellow cake mix
1 (3 oz) pkg instant vanilla pudding
4 eggs
1/2 cup cold water
1/2 cup Vegetable oil
1/2 cup Bacardi rum

GLAZE
1/4 lb butter
1/4 cup water
1 cup granulated sugar
1/2 cup rum

Preheat oven to 325 degrees.
Grease and flour a 12 cup bundt pan.
Sprinkle nuts over the bottom of the pan.
Mix the cake mix, pudding mix, 4 eggs, 1/2 cup cold water, oil and rum together.
Pour the batter over the nuts.
Bake for one hour.
Let cool and invert cake onto serving plate.
This is our birthday serving plate!
Holly Hobby. Prick cake with chop sticks. Make glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 5 minutes. Stirring constantly. Remove from heat. Stir in rum. Drizzle glaze over cake. Let it absorb, then drizzle again till all the glaze is used. Then...... GARNISH! Flamingos are our favorite family birthday ornament. Tomorrow everyone will meet here for Larry's birthday dinner. (because Lauren, Josh and Jami have the evening off from work) Tonight, we are meeting good, good friends for dinner. To celebrate a man who is cared about, admired, loved and is the most amazing person in my life.... Happy Birthday Larry. Love you beyond the flamingos, Me
